A delicious Italian recipe for baked mussels with a crispy breadcrumb, herb, and pecorino topping, finished with a touch of lemon zest and garlic. Perfect as a seafood appetizer.

Method
- Clean the mussels: remove the beard and scrub the shells thoroughly.
- Finely chop parsley and basil. In a bowl, combine coarse breadcrumbs, grated pecorino, chopped parsley, basil, minced garlic, lemon zest, and olive oil. Mix well to create the gratin topping.
- Open the mussels: use a small curved knife to open the shells, reserving the liquid. Detach the mussel from the shell and place it on one half shell. Discard the other half.
- Arrange the mussels on a baking tray. Pour a little of the reserved mussel liquid over the tray.
- Cover each mussel generously with the breadcrumb mixture. Optionally, place a cherry tomato half on top of some mussels.
- Drizzle with extra virgin olive oil.
- Bake in preheated oven at 175°C (347°F) for 5-6 minutes, until the topping is golden and crispy.
- Serve hot.
