A delicious Italian recipe for baked mussels with a crispy breadcrumb, herb, and pecorino topping, finished with a touch of lemon zest and garlic. Perfect as a seafood appetizer.

Method

  1. Clean the mussels: remove the beard and scrub the shells thoroughly.
  2. Finely chop parsley and basil. In a bowl, combine coarse breadcrumbs, grated pecorino, chopped parsley, basil, minced garlic, lemon zest, and olive oil. Mix well to create the gratin topping.
  3. Open the mussels: use a small curved knife to open the shells, reserving the liquid. Detach the mussel from the shell and place it on one half shell. Discard the other half.
  4. Arrange the mussels on a baking tray. Pour a little of the reserved mussel liquid over the tray.
  5. Cover each mussel generously with the breadcrumb mixture. Optionally, place a cherry tomato half on top of some mussels.
  6. Drizzle with extra virgin olive oil.
  7. Bake in preheated oven at 175°C (347°F) for 5-6 minutes, until the topping is golden and crispy.
  8. Serve hot.
