Cotechino with Lentils

Traditional Italian New Year's Eve dish: cotechino sausage with lentils. The lentils are cooked in a flavorful soffritto with guanciale, tomato, and bay leaves, then served with slices of boiled cotechino.

Ingredients

- Extra Virgin Olive Oilas needed
- 100 gGuancialediced
- Celery, Carrot, And Onionchopped
- 1 kgLentilswashed
- 2 tspTomato Paste
- Vegetable Brothor water
- 2 pcsBay Leaves
- Peeled Tomatoes(optional) — one ladleful, optional
- Saltto taste
- Pepperto taste
- Chili Pepper(optional) — optional, not used in this version
Method
- Place the cotechino sausage in cold water. Bring to a boil. Once boiling, reduce heat and simmer for 25 minutes.
- Meanwhile, heat olive oil in a large pot. Add diced guanciale and brown lightly.
- Add the chopped celery, carrot, and onion (soffritto). Sauté over high heat until toasted.
- Add the washed lentils and stir.
- Add tomato paste and vegetable broth (or water). Stir to combine.
- Add bay leaves.
- If desired, add a ladle of peeled tomatoes for extra tomato flavor.
- Season with salt and pepper. Optionally add chili pepper (if using).
- Cook over moderate heat for about 30 minutes, or until lentils are tender. Check after 25 minutes.
- Once lentils are cooked, remove the bay leaves.
- Remove the cotechino from the water, peel off the casing, and slice.
- Serve: place the lentils in a terracotta dish and arrange the sliced cotechino on top.
