Baked Conchiglie with Porcini and Sausage

A delicious and easy first course with baked conchiglie pasta, porcini mushrooms, and sausage, enriched with béchamel and tomato sauce, provola cheese, and Parmesan.

- Garlica little
- Sausagewithout casing
- Conchiglieor any pasta shape
- Porcini Mushroomsfresh or rehydrated
- Provolacubed
- Béchamel Saucehomemade
- Tomato Saucecooked tomato sauce
- Parmigiano Reggianograted
- Black Pepperfreshly ground
- Basilfresh leaves
- Saltfor pasta water and sauce
Method
- Heat a drizzle of extra virgin olive oil in a pan and sauté a little garlic.
- Add the sausage, removed from casing and cut into pieces, and brown it.
- Meanwhile, bring salted water to a boil for the pasta.
- Cut the porcini mushrooms into pieces.
- Add the mushrooms to the pan and sauté together.
- Cut the provola cheese into cubes.
- Cook the pasta 3 minutes less than package directions, then drain.
- Off the heat, add béchamel sauce and a little tomato sauce to the pasta and mix.
- Spread a little béchamel and tomato sauce on the bottom of a baking dish.
- Add half of the pasta mixture, then the provola cubes, then the remaining pasta.
- Top with more provola, a generous sprinkle of Parmesan, freshly ground black pepper, and fresh basil leaves.
- Bake at 200°C (approx. 400°F) until golden and bubbly.
