A rich Roman oxtail stew cooked slowly with pancetta, aromatic vegetables, wine, tomatoes, and a touch of dark chocolate for depth.

Ingredients

- Flourfor dredging

Method
- Dredge the oxtail pieces in flour.
- In a pan, melt a knob of butter, add the floured oxtail, and brown on all sides. Season with a pinch of salt.
- Set the browned oxtail aside.
- Prepare the soffritto: finely dice onion and carrot. In the same pan, use some pancetta fat, add a garlic clove, a bay leaf, and three cloves.
- Deglaze with white wine and let the alcohol evaporate.
- Add crushed peeled tomatoes.
- Return the oxtail to the pan and add water to cover.
- Cook gently over low heat for at least 3 hours, until the meat is very tender.
- At the end of cooking, stir in a little dark chocolate.
- Serve hot.
