Apricot Clafoutis

A classic French dessert that is not a cake nor a flan. This easy apricot clafoutis is made with fresh fruit and a simple batter. A family recipe from Chef Fabrizio Sepe's mother, it's perfect for breakfast or as a snack.

Ingredients
10 items- 600 gApricots
- Burro Sprayfor greasing the pan
- 2 pcsEgg
- 170 gSugar
- 150 gFlour
- 1 tspBaking Powder
- 40 gSeed Oil
- 150 gMilk
- 150 gCream
- Powdered Sugar(optional) — for dusting
Method
- Clean the apricots, cut them in half, and remove the pit. Then cut each half into three pieces.
- Line a 24 cm round baking pan with parchment paper using the trick shown: fold the paper, measure the radius, and cut. Spray butter on the base and edges.
- Arrange all the apricot pieces at the bottom of the pan, placing them close together.
- Prepare the batter: in a bowl, whisk together 2 eggs and sugar until slightly frothy. Add sifted flour, baking powder, vegetable oil, cold milk, and cream. Mix until smooth and well combined.
- Pour the batter gently over the apricots, starting from the center. Place the reserved apricot pieces on top.
- Bake in a preheated fan oven at 175°C for 35 minutes.
- Let cool, then invert onto a plate, remove the parchment paper, and dust with powdered sugar. Serve.
