Ingredients
10 items- Cipolle GrandiLarge yellow onions, cut in half
- Cannara Red OnionRed onion from Cannara, cut in half
- Olive OilMedium-intensity extra virgin olive oil
- Coarse SaltCoarse salt, to taste
- Black PepperBlack pepper, freshly ground, to taste
- 2 pcsMintSmall leaves of delicate mint
- 1 pcsMentoneSpearmint leaf
- Pecorino RomanoGrated, to taste
- Unwaxed LemonUnwaxed lemon, juice only
- BreadcrumbsBreadcrumbs, a handful
Method
- Take large onions, remove the root end and the tip, then split them in half, leaving the outer leaves on.
- If using red onions from Cannara, remove the tougher outer leaves and split them in half.
- Place the onions in a baking dish.
- With your finger, spread a medium-intensity oil over the onions.
- Add a few grains of coarse salt and a grind of pepper.
- Place two small leaves of delicate mint and one leaf of spearmint on the onions.
- Grate some Pecorino Romano over the top.
- Add a couple more grains of salt and a grind of pepper.
- Squeeze a little juice from an unwaxed lemon over the onions.
- Sprinkle a handful of breadcrumbs to absorb the flavors.
- Add a little more oil.
- Bake for 15-20 minutes.
- Once cooked, drizzle with new oil before serving.
