A rustic and flavorful traditional Abruzzese dish from pig slaughter days, made with three cuts of pork, crusco peppers, plenty of garlic, and slow cooking that releases intense and irresistible aromas.

Method

  1. Heat olive oil in a large pot. Add garlic cloves in their skins, a bay leaf, and rosemary. Let them warm up slowly.
  2. Add the pork pieces: pancetta (pork belly), pork ribs, and capocollo or lonza (pork shoulder/neck), all cut into large chunks. Brown them well on all sides.
  3. Deglaze with white or red wine, letting the alcohol evaporate completely.
  4. Lower the heat, cover the pot, and cook for about 30 minutes.
  5. Add the dried crusco peppers: remove the stems and seeds, you can leave them whole or break them. Stir, cover, and continue cooking.
  6. Add a pinch of salt (not too much). Cover and cook until the meat is very tender, checking occasionally. If the pot dries out, add a little water. Cooking time can vary from 30 minutes to over an hour depending on the size of the meat pieces.
  7. Near the end of cooking, add a few more garlic cloves (crushed or whole) and some black pepper. Cook for a few more minutes.
  8. Serve the meat pieces with the cooking oil and the crusco peppers. The oil is rich with pork fat and is an essential part of the dish.
