Chicory and Pecorino Pasta

A simple Roman pasta dish where bitter chicory is blanched, then sautéed with garlic and chili, tossed with al dente rigatoni and plenty of pecorino cheese.
Method
- Bring a pot of salted water to a boil and cook the chicory for 3 minutes.
- Drain the chicory and plunge it into ice water to keep its color.
- Squeeze the chicory well to remove excess water.
- In a pan, heat good olive oil with grated garlic and chili peppers.
- Add the chicory and sauté briefly.
- Cook the rigatoni until al dente.
- Drain the pasta and add it to the pan with a splash of cooking water.
- Add grated pecorino cheese and toss to combine.
- Serve immediately.
