Traditional Italian red wine donuts from the Castelli Romani area, infused with anise and orange zest. Crunchy on the outside, soft inside. Also known as 'mbriachelle in Rome.

Method

  1. Place anise seeds and orange zest in the red wine. Let steep for at least 30 minutes.
  2. Strain the wine to remove the solids.
  3. In a large bowl, mix together flour, baking powder, salt, and sugar. Add olive oil and the strained wine. Knead into a smooth dough.
  4. Let the dough rest for 20 minutes.
  5. Divide the dough into pieces of about 35 g and shape them into rings (donuts).
  6. Roll each donut in granulated sugar to coat.
  7. Place on a baking tray lined with parchment paper.
  8. Bake in a static oven at 180°C (350°F) for 23-25 minutes.
  9. Let cool completely before serving to achieve a crunchy texture.
