A simple Italian cookie made with wine, perfect for dipping in coffee or wine. These ciambelline are typical of the Roman countryside, with a crunchy sugar coating.

Method

  1. Combine 80 g sugar, 100 g white wine, 100 g sunflower oil, 1 tsp baking powder, 250 g flour and a pinch of salt in a bowl. Mix with a fork.
  2. Transfer the dough to a lightly floured work surface and knead until smooth. Add more flour if sticky, up to 275 g total.
  3. Let the dough rest for 30 minutes at room temperature.
  4. Line a perforated baking tray with a silicone mat or parchment paper.
  5. After resting, shape the dough into small rings: cut pieces, overlap the ends, press together, dip first in white wine then in granulated sugar.
  6. Place the rings on the prepared tray, spacing them apart. Adjust the center hole if needed.
  7. Bake at 170°C (340°F) for 25 minutes or until golden.
  8. Let the cookies cool completely at room temperature before serving. They are best enjoyed cold.
