Wine Ring Cookies

These wine ring cookies are a classic Italian treat, but this version uses wholemeal spelt flour and hazelnuts for a unique texture and flavor. The red wine, infused with star anise, gives them a beautiful color and aroma. Perfect with a glass of dessert wine.

Ingredients
8 items- 200 gHazelnutsBlended or use hazelnut flour
- 1000 gWhole Grain Farro FlourWholemeal spelt flour
- 390 gSugar
- 20 gBaking PowderBaking powder
- 270 gSunflower Oil(optional) — Can substitute with same amount of extra virgin olive oil
- 340 gRed WinePreferably Cesanese, infused overnight with star anise and then strained
- Star AniseInfused in the red wine overnight, then discarded
- 10 gSalt
Method
- Blend 200 g of hazelnuts in a blender until coarse (or use hazelnut flour).
- In a large bowl, combine 1 kg of wholemeal spelt flour, the blended hazelnuts, 390 g of sugar, and 20 g of baking powder.
- Add 270 g of sunflower seed oil (or extra virgin olive oil), 340 g of red wine (preferably Cesanese, infused overnight with star anise and then strained), and 10 g of salt.
- Mix with your hands until the dough comes together and the bowl is clean.
- Cover the dough with plastic wrap and refrigerate for at least 6 hours.
- After resting, shape the dough into small rings (about 50–60 g each). Roll one side of each ring in granulated sugar.
- Place the rings on a baking tray lined with parchment paper.
- Bake in a static oven preheated to 170°C for 25–30 minutes, until golden.
- Let cool completely, then store in a bread bag to keep for several days.
