Chiacchiere di Carnevale

Classic Italian Carnival fritters, also known as chiacchiere, are crispy and fragrant, made with flour, eggs, butter, and white wine, and dusted with powdered sugar. A traditional treat for Carnevale.
Ingredients
8 items- 500 gFlourType 0 flour, strong flour

- VanillaA pinch or seeds from a vanilla pod

Method
- Sift the flour and add sugar, salt, vanilla, and lemon zest.
- Add the lightly beaten eggs and mix.
- Add the soft butter, then gradually add the white wine while kneading.
- Transfer to a floured surface and knead until smooth, slightly sticky, and soft.
- Wrap in plastic wrap and let rest at room temperature for at least one hour.
- Divide the dough into smaller pieces and roll it out as thin as possible using a rolling pin or a pasta machine.
- Using a fluted cutter, cut the dough into rectangular shapes and make small slits in the center.
- Place the chiacchiere on a floured kitchen towel without overlapping.
- Fry in hot oil at 170°C until golden on both sides.
- Drain on paper towels and dust with powdered sugar.
- Serve with sanguinaccio (optional).
