Chiacchiere di Carnevale

Classic Italian Carnival fritters, also known as chiacchiere, are crispy and fragrant, made with flour, eggs, butter, and white wine, and dusted with powdered sugar. A traditional treat for Carnevale.

Ingredients

Method

  1. Sift the flour and add sugar, salt, vanilla, and lemon zest.
  2. Add the lightly beaten eggs and mix.
  3. Add the soft butter, then gradually add the white wine while kneading.
  4. Transfer to a floured surface and knead until smooth, slightly sticky, and soft.
  5. Wrap in plastic wrap and let rest at room temperature for at least one hour.
  6. Divide the dough into smaller pieces and roll it out as thin as possible using a rolling pin or a pasta machine.
  7. Using a fluted cutter, cut the dough into rectangular shapes and make small slits in the center.
  8. Place the chiacchiere on a floured kitchen towel without overlapping.
  9. Fry in hot oil at 170°C until golden on both sides.
  10. Drain on paper towels and dust with powdered sugar.
  11. Serve with sanguinaccio (optional).
