No-bake cheesecake is a clever solution for making an elegant and delicious dessert without turning on the oven. If you use strawberries and a strawberry jelly topping, it will become your favorite cheesecake (it is for us!!!)

Ingredients
11 items- 100 gDigestive Biscuits (or Plain Biscuits)Finely crushed
- 40 gButterMelted
- 375 gSpreadable CheeseCream cheese
- 210 gStrawberry YogurtStrawberry yogurt
- 60 gPowdered SugarPowdered sugar
- 8 gSheet Gelatin (for the filling)Soaked in cold water, then dissolved in hot cream
- CreamA little, to dissolve the gelatin
- 500 gStrawberriesSome for lining the base and decorating, some for the jelly
- 15 gSugar (for Jelly)About 1 tablespoon, adjust to taste
- WaterFor boiling the strawberries
- 4 gSheet Gelatin (for the topping)For the jelly topping
Method
- Finely crush the digestive biscuits.
- Melt the butter and mix with the crushed biscuits.
- Line the bottom of an 18cm cake tin with parchment paper. Pour in the biscuit mixture, spread evenly, and compact with a meat mallet or similar.
- Refrigerate the base for at least 30 minutes.
- Soak the gelatin sheets in cold water for 2-3 minutes to soften.
- In a bowl, combine cream cheese, strawberry yogurt, and powdered sugar until smooth.
- Heat a little cream in a saucepan until boiling. Squeeze the gelatin and dissolve it in the hot cream, stirring.
- Pour the cream-gelatin mixture into the cheese mixture and fold gently.
- Slice the strawberries into thin slices.
- Remove the base from the fridge. Arrange strawberry slices on top of the base, covering the surface.
- Pour the cream over the strawberries and level it.
- Refrigerate the cake while preparing the jelly topping.
- For the jelly: In a saucepan, combine the remaining strawberries, some water, and sugar. Bring to a boil.
- Once boiling, turn off heat. Optionally blend, then strain to obtain a clear liquid.
- Soak another gelatin sheet in cold water. Add the softened gelatin to the hot strawberry liquid and stir to dissolve.
- Allow the jelly to cool almost completely (about 15-20 minutes) to prevent melting the cheesecake.
- Once the cake is well chilled, pour the jelly over the top. Decorate with fresh strawberries.
- For the glass version: Repeat the same steps in glasses. Place half a strawberry at the bottom, then crushed biscuits, strawberry pieces, cream, and finally jelly.
- Final decoration: Place a strawberry on top and brush with a little jelly for shine.
