Cavatelli with Beans and Mussels

Cavatelli fagioli e cozze is a traditional dish from Puglia, combining fresh cavatelli pasta with creamy cannellini beans and flavorful mussels, enriched with garlic, parsley, and a touch of chili pepper. Tomato passata adds a hint of sauce and acidity, but is optional.

Ingredients

- 400 gCannellini BeansPre-cooked or canned cannellini beans
- MusselsFresh mussels (about 1 kg recommended for 4 servings)
- Extra Virgin Olive OilExtra virgin olive oil, as needed for cooking and drizzling
- Garlic2 cloves (one for mussel cooking, one for sauce)
- ParsleyFresh parsley, a bunch
- Chili Pepper(optional) — Chili pepper, to taste (optional)
- Tomato PassataTomato passata (or fresh tomatoes or tomato concentrate)
Method
- Place cleaned mussels in a pan with extra virgin olive oil, a bunch of parsley, a split garlic clove, and chili pepper (optional). Cover and cook without salt until the mussels open.
- Remove the mussels from the pan and set aside. Filter the cooking liquid through a strainer to remove impurities and reserve the juice.
- In the same pan, add more extra virgin olive oil, another garlic clove, and parsley. Sauté gently.
- Add tomato passata (or fresh tomatoes or tomato concentrate) and cook until the sauce thickens slightly.
- Add the cannellini beans (pre-cooked or canned) and some of the reserved mussel juice. Stir and cook on high heat.
- Remove a portion of the beans and the garlic clove from the pan and blend them into a creamy paste. Set aside.
- Cook the cavatelli in boiling salted water until al dente.
- Remove the mussels from their shells, reserving a few for garnish.
- Drain the cavatelli and add them to the bean sauce. Toss for 1–2 minutes, adding more mussel juice if needed to loosen the sauce.
- Stir in the mussels and the bean cream. Adjust seasoning (no salt needed, as the mussels provide saltiness).
- Serve with a drizzle of extra virgin olive oil and a sprinkle of fresh parsley.
