Ingredients

Method
- Finely pound white pepper and anise seeds using a mortar and pestle.
- In a small saucepan, heat sugar and water until the sugar dissolves (do not caramelize).
- Add the ground spice mixture to the syrup, turn off the heat, and let cool completely.
- In a large bowl, mix flour with ground cinnamon, coriander, nutmeg, grated orange zest, and a pinch of salt.
- Chop walnuts and dice the orange into small cubes.
- Add baking ammonia to the dry ingredients and stir.
- Pour the cooled syrup into the dry ingredients and mix until absorbed.
- Add the chopped walnuts and diced orange and incorporate thoroughly.
- Sprinkle a little flour on a work surface and turn the dough out. Shape into a cylinder.
- Wrap in plastic wrap or parchment paper and refrigerate for at least 30 minutes.
- Remove from fridge, dust with flour, and cut pieces of about 50 g each.
- Shape each piece into a small mound and place on a baking sheet.
- Dust with icing sugar.
- Bake in a static oven at 160°C for about 20 minutes.
