A traditional Sicilian Easter cake made by nuns, featuring sponge cake soaked in coffee instead of alcohol, layered with fresh mountain ricotta sweetened with sugar and chocolate, and decorated with candied fruit.

Method
- Place the sponge cake in the appropriate pan.
- Soak the sponge cake with coffee, as the nuns traditionally did instead of using an alcoholic soak.
- Mix the fresh mountain ricotta with sugar and chocolate.
- Fill the cassata with abundant fresh ricotta mixture.
- Soak again with coffee.
- Refrigerate for a couple of hours to let it rest and meld.
- Decorate with candied fruit as the final signature touch.
