A classic Sicilian dish of fried eggplants in a sweet and sour sauce with celery, capers, olives, raisins, and pine nuts.

Ingredients
13 items- EggplantsCut into 2 cm cubes and salted to remove bitterness.
- SaltFor salting the eggplants.
- White OnionThinly sliced.
- CeleryCleaned of strings and blanched.
- Pomodori MaturiBlanched, peeled, seeded and diced.
- Salt-Packed CapersDesalted.
- Pitted Green Olives
- 40 gSugar
- White Wine Vinegar
- Raisins
- Pine Nuts
- BasilFresh.
- Extra Virgin Olive OilFor frying and sautéing.
Method
- Cut the eggplants into 2 cm cubes. Place in a colander, salt them, cover with a plate and weigh down to drain bitterness.
- Score the tomatoes with a cross, blanch them, peel, remove seeds, and dice.
- Clean the celery by removing strings with a peeler, then dice. Blanch in salted water.
- Slice the onion thinly.
- In a pan, heat olive oil and gently sauté the onion and celery.
- Add the diced tomatoes and cook.
- Add pine nuts, raisins, green olives, and capers.
- Add the sugar (40 g) and vinegar, stir, and bring to a boil.
- Fry the eggplants in extra virgin olive oil until golden. Drain on paper towels.
- Add the fried eggplants to the sauce, mix, and cook for 5 minutes.
- Add fresh basil, then turn off the heat.
- Let the caponata rest for at least 3-5 hours, preferably overnight, before serving.
