Capellini cooked directly in a flavorful crustacean broth, served with raw red shrimp, creamy burrata, and a spicy-extracted ventricina oil, finished with herb oil and lemon zest.

Method
- Heat a drizzle of oil in a pan and add the fermented black garlic, along with marjoram, thyme, and a mint stalk. Stir well to combine.
- Add a little more oil and the crustacean broth. Bring to a boil.
- Add the capellini directly into the boiling broth. Reduce the heat and cook without stirring for about 2 minutes, or until al dente, to avoid breaking the pasta.
- Meanwhile, cut the red shrimp lengthwise in half.
- When the pasta is almost cooked, add a splash more broth if needed.
- Remove the pan from the heat and toss the pasta with a drizzle of oil to mantecare.
- Plate the pasta, arranging the raw shrimp halves on top.
- Drizzle with the ventricina oil and the herb oil.
- Add a generous spoonful of burrata cream over the top.
- Finish with freshly grated lemon zest.
