Ingredients

- OlivesPitted olives
- Desalted CapersDesalted capers, not pickled
- ParsleyFresh parsley, chopped
- Chili PepperChili pepper, to taste
- Olive OilExtra virgin olive oil
- Garlic1 clove of garlic
- White WineA splash of white wine
- Tomato SauceTomato sauce
- SaltSalt, to taste
- CalamariWhole squid, cleaned
Method
- Remove the crust from stale bread, add a drop of water, and crumble it.
- Add olives, desalted capers (not pickled), and parsley. Mix well.
- Clean the squid: remove the bone, trim, and cut tentacles and wings into small pieces.
- Cook the tentacles and wings briefly in a pan with a little oil.
- Add a pinch of chili pepper to the bread mixture and work it together.
- Stuff the squid bodies with the bread mixture.
- In a pan, heat oil with a clove of garlic. Remove garlic and parsley.
- Add the stuffed squid to the pan. Add a splash of wine.
- Once the wine evaporates, add tomato sauce. Season with salt.
- Cover and cook on low heat for 40 minutes.
- Serve the squid with the sauce.
