A fresh twist on the classic Roman Cacio e Pepe, with the addition of lime and Roman mint, perfect for hot summer days.

Ingredients
7 items- Tonnarelli
- Pecorino RomanoEqual weight to warm water for the cream
- Black PeppercornsFor the cooking water and for the cream
- Timut Pepper(optional) — Optional; has a pink grapefruit aftertaste
- Lime
- Roman MintRoman mint
- Coarse SaltFor the pasta water
Method
- Put black peppercorns in the outer basket of the water to flavor the water without getting into the pasta.
- Dose the right amount of coarse salt in the pasta water because Roman dishes are already quite salty.
- Prepare the pecorino cream: use equal weight of pecorino and warm water. Blend with an immersion blender until smooth.
- Cook the tonnarelli pasta (very short cooking time).
- Transfer the pecorino cream to a bowl.
- Add good quality black pepper to the cream.
- Add timut pepper (with a pink grapefruit aftertaste) for an extra layer of flavor.
- Drain the pasta, let it cool slightly, then add it to the cheese cream.
- Add a splash of pasta cooking water to help the cream form and mix well.
- Add fresh mint and lime to the pasta.
- Plate the pasta, finishing with a little more pecorino, a touch of mint, and a final sprinkle of pepper.
