Method

  1. Prepare the broccoli rabe: heat olive oil in a pan with garlic cloves. Add the broccoli rabe florets and leaves, season with a pinch of salt, and cook slowly until tender.
  2. Meanwhile, prepare the beef: take a piece of scamone (or similar cut), slice it thinly, then mince it with a knife until it resembles a tartare consistency. Add a drop of water and mix.
  3. Cut the pancetta tesa into small cubes and mix into the beef mince.
  4. Form the beef mixture into patties using a ring mold. Place on a piece of baking paper.
  5. Heat oil in a pan over high heat. Add the patties and cook until nicely browned on the outside, then reduce the heat to finish cooking to a pink center.
  6. While the patties cook, slice the rustic bread into two thin slices.
  7. Prepare the frittata mixture: beat the eggs in a bowl. Add grated Bitto cheese, grated fresh black truffle, and a tiny drop of cream. Mix well.
  8. Cook the frittata in a separate pan until set.
  9. Once the patties are cooked, remove them from the pan. On the bottom bread slice, place a patty. Top with the cooked broccoli rabe, then a slice of the frittata. Finish by shaving fresh black truffle over the top. Close with the top bread slice.
  10. Serve immediately.
