Bulgur with Beans and Onion

A simple, spicy dish of bulgur topped with a medley of beans and spring onions, flavored with garlic and chili. Perfect as a hearty one-pot meal, served hot or cold.

- Vegetable BrothEqual quantity to bulgur
- 1 pcsGarlic
- 4 pcsChili PeppersAdjust to taste; mix of green and red recommended
- Olive Oil
- Cannellini BeansCooked or canned, drained
- Red BeansCooked or canned, drained
- Black BeansCooked or canned, drained
- Spring OnionsIncludes green tops; use fresh green part for garnish

Method
- Place the bulgur in a bowl and pour boiling vegetable broth over it in equal parts. Cover with plastic wrap or a lid and let it sit for 15–30 minutes until the bulgur is tender and has absorbed the liquid.
- In a pan, heat a drizzle of olive oil. Sauté the garlic clove and chili peppers until fragrant.
- Add the cannellini, red, and black beans. Season with a pinch of salt and let the flavors meld for a few minutes.
- Slice the spring onions (including some of the green parts) and add them to the beans. Stir well and cook briefly until the onions soften.
- Taste and adjust seasoning or spiciness as desired.
- To serve, place the cooked bulgur on the bottom of a plate, top with the bean mixture, and garnish with fresh spring onion greens.
