Bucatini all'Amatriciana

A classic Roman pasta dish from Amatrice, featuring bucatini in a rich sauce of guanciale, tomato, and pecorino.

Ingredients
7 items- Guanciale
- Dry White Wine
- Peeled Tomatoes
- Chili PepperA small tip, to taste.
- Black PepperTo taste.
- Bucatini
- PecorinoGrated, preferably Pecorino Gorzano di Amatrice. Can be added to sauce during cooking or at the end.
Method
- Cut the guanciale against the grain to capture all fibers.
- Place the guanciale in a cold pan and slowly render, letting it sweat until golden.
- Deglaze with dry white wine and let the alcohol evaporate.
- Add crushed whole peeled tomatoes by hand, a tip of chili pepper, and some black pepper.
- Cook the bucatini until almost al dente, then drain 2 minutes early.
- Toss the pasta in the sauce to finish cooking.
- Turn off the heat, add grated pecorino cheese, and stir.
- Let the pasta rest for 3-4 minutes before serving.
