Romanesco broccoli florets, blanched and dipped in batter, deep-fried until crispy. A deliciously crunchy vegetable side.

Ingredients
5 items- Romanesco Broccolicut into small florets
- Saltfor blanching water and batter
- 700 gFlourfor the batter
- 15 gBrewer's Yeastbrewer's yeast, for the batter
- Acqua gassatasparkling water, enough to make a smooth batter
Method
- Cut the Romanesco broccoli into small florets.
- Bring a pot of salted water to a boil. Blanch the florets for about 2-3 minutes until just tender.
- Drain and let cool slightly on a kitchen towel.
- Make the batter: in a bowl, mix 700 g (00) flour with 15 g brewer's yeast. Gradually add sparkling water while whisking until smooth and semi-liquid. Season with salt.
- Dip each floret into the batter, letting the excess drip off.
- Deep-fry in hot oil (170-180°C) until golden and crispy.
- Drain on paper towels and serve immediately.
