A quick and easy recipe for sea bass and vegetables cooked en papillote with aromatic herbs and a surprising twist of black tea.

- 1 pcsCarrot
- Yellow Cherry Tomatoes
- Red Cherry Tomatoes
- 1 pcsBranzino
- Rosemary
- Bay Leaves
- Sage(optional) — if available
- 1 pcsTè Nerotea bag
- 1 tspOlive Oil
- Salt
Method
- Cut the potatoes and white turnip into similar-sized squares or pieces.
- On a large piece of parchment paper or foil, create a bed with rosemary sprigs, bay leaves, and sage (if available).
- Place a black tea bag inside the cavity of the sea bass.
- Season the sea bass with a little salt and a drizzle of olive oil.
- Place the fish on the herb bed.
- Arrange the sliced carrot, cherry tomatoes (yellow and red), and any other vegetables you have around the fish.
- Add a few more herbs on top of the fish and vegetables.
- Drizzle with another teaspoon of olive oil.
- Close the parchment paper tightly to form a sealed packet (cartoccio).
- Bake in a preheated oven at 180°C for about 16 minutes, depending on the size of the fish, until the fish is cooked through and the vegetables are tender.
- Carefully open the packet and serve immediately.
