Braciolette alla Messinese are Sicilian meat rolls filled with provolone and seasoned breadcrumbs, skewered and pan-fried until golden. A simple yet extraordinary street-food style dish from Messina.

Ingredients

- GarlicGarlic cloves
- BreadcrumbsBreadcrumbs
- PecorinoGrated pecorino cheese
- SaltSalt
- PepperBlack pepper
- Olive OilExtra virgin olive oil, for the mixture, brushing, and frying
- Fettine di CarneThin slices of veal or beef, pounded if needed
- Provolone PiccanteSpicy provolone cheese, cut into small pieces
Method
- Finely chop parsley and garlic together.
- Mix the chopped herbs with breadcrumbs, grated pecorino, salt, pepper, and a drizzle of olive oil to make a seasoned breadcrumb mixture.
- Take a thin slice of meat and place a piece of provolone piccante and a small amount of the breadcrumb mixture in the center.
- Fold the edges of the meat over the filling and roll tightly to close.
- Brush each roll lightly with olive oil, then coat in the breadcrumb mixture again.
- Repeat for all slices.
- Skewer the rolls onto skewers, about 2–3 per skewer.
- Heat olive oil in a pan over medium heat.
- Place the skewered rolls in the pan and cook, turning occasionally, until golden brown and cooked through.
- (Optional) Alternatively, bake in the oven.
