- Sour Cream(optional) — Sour cream, for serving
- Smoked Salmon(optional) — Smoked salmon, for serving
- Dill(optional) — Dill, for serving
- Uova di Lompo(optional) — Lumpfish roe, for serving
- Lemon(optional) — Zest only, for serving
- Sesame Seeds(optional) — Sesame seeds, for serving
Method
- Mix the dry ingredients: flour, instant yeast (baking powder), and baking soda.
- Crack an egg into a separate bowl and check for shell pieces, then add to the dry mixture.
- Add kefir (or buttermilk) and melted butter. Do not use cream.
- Add salt and mix until you obtain a smooth batter.
- Heat a non-stick pan over medium-low heat and add a little butter to lightly grease the pan.
- Pour a small amount of batter into the pan to form small blinis. Cook until bubbles form on the surface, then flip and cook until golden.
- Adjust the temperature as needed to prevent burning; keep the heat medium-low.
- Continue cooking all the blinis. They can be slightly uneven in size.
- Serve the blinis warm. Top with sour cream, then add smoked salmon, dill, lumpfish roe, a touch of lemon zest, and sesame seeds.
- Enjoy immediately.
