A Florentine steak made with Irish Angus beef, cooked using an indirect heat method with cherry wood chips for a smoky flavor.

Method
- Let the steak rest outside the fridge for one hour.
- Add cherry wood chips to the coals for smoking.
- Set up the grill with indirect heat using a refractory brick to shield the meat.
- Place the steak on the grill over indirect heat for about 30 minutes, keeping the temperature around 150°C.
- After 30 minutes, remove the brick, increase heat to high, and sear the steak directly over the flames for 5 minutes per side.
- Season with salt and serve.
