Method

  1. Let the steak rest outside the fridge for one hour.
  2. Add cherry wood chips to the coals for smoking.
  3. Set up the grill with indirect heat using a refractory brick to shield the meat.
  4. Place the steak on the grill over indirect heat for about 30 minutes, keeping the temperature around 150°C.
  5. After 30 minutes, remove the brick, increase heat to high, and sear the steak directly over the flames for 5 minutes per side.
  6. Season with salt and serve.
