Florentine Steak

A classic Florentine steak made from Chianina beef, grilled on a gas barbecue using the 5-5-5 method, served with sautéed tomatoes, borlotti beans, and bruschetta.

Method

  1. Remove the steak from its packaging 2 hours before cooking to bring it to room temperature.
  2. Trim the external fat by making incisions on the fat only, not the meat.
  3. Brush the steak with extra virgin olive oil.
  4. Preheat the gas barbecue to 250°C.
  5. Place the steak on the grill and cook for 5 minutes.
  6. Flip the steak and cook for another 5 minutes.
  7. Flip the steak again and cook for another 5 minutes.
  8. Meanwhile, prepare the sides: cut a tomato in half.
  9. Place the tomatoes in a pan with olive oil and garlic, cover, and cook on low heat until soft.
  10. Add basil and salt, continue cooking until done.
  11. Cook fresh borlotti beans in water with sage and garlic until tender (pre-cooked).
  12. For the bruschetta: toast bread slices on the grill.
  13. Rub the toasted bread with a clove of garlic.
  14. Season the cooked beans with salt and pepper.
  15. Place the cooked steak on a cutting board and cut along the bone to separate the parts.
  16. Slice the meat and season with salt and a drizzle of olive oil to taste.
  17. Serve the steak with the sautéed tomatoes, beans, and bruschetta.
