A classic Florentine steak made from Chianina beef, grilled on a gas barbecue using the 5-5-5 method, served with sautéed tomatoes, borlotti beans, and bruschetta.

- Remove the steak from its packaging 2 hours before cooking to bring it to room temperature.
- Trim the external fat by making incisions on the fat only, not the meat.
- Brush the steak with extra virgin olive oil.
- Preheat the gas barbecue to 250°C.
- Place the steak on the grill and cook for 5 minutes.
- Flip the steak and cook for another 5 minutes.
- Flip the steak again and cook for another 5 minutes.
- Meanwhile, prepare the sides: cut a tomato in half.
- Place the tomatoes in a pan with olive oil and garlic, cover, and cook on low heat until soft.
- Add basil and salt, continue cooking until done.
- Cook fresh borlotti beans in water with sage and garlic until tender (pre-cooked).
- For the bruschetta: toast bread slices on the grill.
- Rub the toasted bread with a clove of garlic.
- Season the cooked beans with salt and pepper.
- Place the cooked steak on a cutting board and cut along the bone to separate the parts.
- Slice the meat and season with salt and a drizzle of olive oil to taste.
- Serve the steak with the sautéed tomatoes, beans, and bruschetta.
