Ingredients
6 items- FlourAll-purpose flour
- Parmigiano ReggianoGrated Parmesan cheese
- ButterButter
- GorgonzolaGorgonzola cheese (dolce or piccante)
- Black Pepper(optional) — Freshly ground black pepper, to taste
- Marmellata di FichiFig jam, for filling
Method
- In a bowl, mix together flour, grated Parmesan, butter, gorgonzola, and a pinch of black pepper. Knead until a dough forms, similar to a shortcrust pastry.
- Roll out the dough between two sheets of parchment paper to about 2 mm thickness.
- Refrigerate for about 30 minutes to firm up.
- Cut out rounds from the dough. For half of the rounds, cut out a hole in the center to create rings. Leave the other half solid.
- Place the solid rounds on a baking sheet. Top each with a ring round, and fill the center hole with fig jam.
- Bake in a static oven preheated to 180°C (350°F) for 15-18 minutes, until golden.
- Let cool completely before serving.
