Crispy on the outside and super creamy on the inside, these traditional Italian cream puffs are made for Father's Day (St. Joseph's Day).

Ingredients
8 items- ButterUsed for the choux pastry
- WaterBase liquid for the pastry
- SaltPinch for seasoning
- FlourAll-purpose flour
- EggLarge eggs, added one by one
- High Oleic Sunflower OilHigh-oleic sunflower oil for frying, keep below 175°C
- Pastry CreamUsed for filling; recipe not included in this video
- Powdered SugarFor dusting
Method
- Melt the butter in water with a pinch of salt over moderate heat for 3-4 minutes.
- Add the flour and stir until a smooth paste forms that leaves a film on the bottom of the pan.
- Remove from heat and let it cool slightly. Do not let it cool completely.
- Add eggs one at a time, kneading by hand until each is fully absorbed.
- Continue until all eggs are incorporated; the dough should be smooth and glossy.
- Transfer the dough to a piping bag with your choice of tip.
- Cut squares of parchment paper and pipe the bignè onto them, then cut around each one.
- Heat high-oleic sunflower oil to 165°C (never exceed 175°C).
- Place the bignè with the paper into the oil upside down; after a few seconds remove the paper.
- Fry for 8-10 minutes until puffed and golden brown.
- Drain and let cool.
- Fill generously with pastry cream (the bignè should burst with cream).
- Dust with powdered sugar.
