Choux Puffs

Step-by-step recipe for perfect choux puffs (bignè) for profiteroles. Light and crispy choux pastry.
Method
- Put water in a pot, add a pinch of salt, and heat over moderate flame until warm.
- Add butter cut into small pieces and let it melt, then bring to a boil.
- As soon as it boils, add all the flour at once, remove from heat, and stir energetically until a smooth dough forms.
- Return the dough to the heat and continue stirring until a white film forms on the bottom.
- Transfer the dough to a cold bowl and let it cool for 5 minutes.
- Add the eggs one at a time, mixing thoroughly until each is fully absorbed.
- Transfer the dough to a piping bag fitted with a round nozzle.
- Pipe small rounds onto a parchment-lined baking sheet. (Tip: secure the parchment with small dots of dough.)
- Dampen your fingertips and round off the peaks.
- Bake at 180°C (350°F) for 15 minutes, then lower to 110°C (230°F) for 10 minutes. Do not open the oven during baking.
