Whipped salt cod is a creamy spread made from salt cod cooked in milk and cream, then whipped with olive oil until smooth and fluffy. It is flavored with garlic, rosemary, bay leaf, lemon zest, and parsley, and served on toasted bread.

Ingredients
12 items- 300 gSalt Cod
- 400 mlMilk
- Creamas needed
- Water1 glass
- White Pepperto taste
- Rosemarya sprig
- 2 pcsBay Leaves
- Black Pepperto taste
- Lemon Zestzest of 1 lemon, divided
- 1 pcsGarlic
- Olive Oilas needed
- Parsleychopped, to taste
Method
- Prepare the cooking liquid: in a pot combine milk, cream, and a glass of water. Add white pepper, rosemary, bay leaves, black pepper, and lemon zest. Heat until hot but not boiling.
- Cut the salt cod into pieces, removing skin and bones.
- Once the liquid is hot, add the cod pieces and cook for 20 minutes.
- After cooking, strain the cod, reserving the cooking liquid for other uses.
- Remove the spices from the cod.
- Place the cod in a bowl along with a clove of garlic. Begin whipping with a whisk while gradually adding olive oil, until the mixture becomes a creamy emulsion.
- Add chopped parsley and a little more lemon zest. Mix well.
- Serve on toasted bread.
