A perfect aperitif: crispy fried salt cod with a magical batter made from rice flour, 00 flour, sparkling water, beer, and ice cubes, served with a lime mayonnaise and a spicy honey dip.

Method
- Remove the skin from the salt cod and cut into large bite-sized pieces. Set aside.
- Prepare the magical batter: mix rice flour and 00 flour with cold sparkling water and cold beer. Add two ice cubes to make the fried food even crispier.
- Make a flavored mayonnaise: combine mayonnaise with lime (or lemon) and a raw egg yolk (optional).
- Heat oil for deep frying.
- Dip the salt cod pieces into the batter and fry until golden and crispy.
- Prepare a spicy honey dip: mix honey with a drop of water, chili pepper, and a very small amount of grated garlic.
- Quickly toss the fried cod in the spicy honey dip or serve on the side.
- Serve immediately as an aperitif.
