A traditional Roman recipe for salt cod cooked in a tomato sauce with potatoes, pine nuts, and raisins, perfect for a comforting meal.

Ingredients
12 items- 400 gDesalted Salt Codpreviously desalted
- 6 pcsTomatoripe tomatoes, peeled
- 150 gPotatoescut into small cubes
- 1 pcsGarlic1 clove
- Onionto taste, sliced thinly
- Chili Pepperto taste
- Raisinsa handful
- Pine Nutsa handful; can be toasted first
- Parsleya bunch, chopped
- Extra Virgin Olive Oilextra virgin olive oil, for cooking and finishing
- Saltto taste
- Pepperto taste
Method
- Cut the garlic clove in half and place it in a pan with olive oil over medium heat.
- Slice the onion very thinly and add it to the pan, along with the parsley stems.
- Add the peeled tomatoes, cut into pieces, and cook for a few minutes.
- Remove the parsley stems and add chili pepper to taste.
- Cut the desalted cod into chunks, removing any bones, and place them in the pan on top of the tomato sauce.
- Cut the potatoes into small cubes and add them to the pan, making sure they are in contact with the liquid.
- Add the raisins and pine nuts (you can toast the pine nuts first if desired).
- Sprinkle with chopped parsley.
- Cover the pan and cook for 20 minutes, shaking the pan occasionally but not stirring.
- Check seasoning, add salt and pepper if needed.
- Serve hot, with a drizzle of raw extra virgin olive oil.
