A classic Roman recipe for crispy fried sweetbreads with mushrooms, seasoned with rosemary and garlic. Perfect as an appetizer with a glass of chilled white wine.

Ingredients

- Flourfor dredging
- Rice Flour(optional) — alternative to wheat flour for gluten-free
- 2 pcsRosemarysprigs
- 1 pcsGarlicclove, crushed
- Champignon Mushroomscleaned and sliced
- 2 pcsSpring Onionssliced
- Olive Oilfor cooking mushrooms
- Clarified Butterfor frying sweetbreads
- Saltto taste
- Black Pepperto taste
Method
- Soak the sweetbreads in cold water for at least 2 hours to remove blood.
- Blanch the sweetbreads in boiling salted water for a few minutes.
- Remove from water, let cool slightly, then peel off the membrane.
- Cut the sweetbreads into uniform pieces.
- Dredge the sweetbread pieces in flour (or rice flour for gluten-free).
- In a pan, heat olive oil and cook the mushrooms with spring onion, rosemary, and crushed garlic cloves until dry and golden. Do not salt until the end.
- In another pan, heat clarified butter and fry the floured sweetbreads until golden and crispy.
- Season the sweetbreads with salt and pepper.
- Combine the sweetbreads with the mushrooms and add extra pepper if desired.
- Serve immediately as an appetizer with a glass of chilled white wine.
