Animelle with Artichokes

A classic Roman dish of veal sweetbreads (animelle) cooked with artichokes, seasoned with mint and parsley.

- Soak the sweetbreads in cold water for two hours.
- Boil the sweetbreads in boiling water with two tablespoons of vinegar for 10 minutes.
- Remove the sweetbreads and place them in cold water to stop cooking.
- Clean the sweetbreads by removing the skin and any excess fat.
- Cut the sweetbreads into cubes.
- In a pan over high heat, sear the sweetbread cubes until golden brown.
- Add the artichokes to the pan.
- Season with mint, parsley, and a pinch of salt.
- Add a splash of water to help cooking.
- After 10 minutes, lightly drain the sweetbreads and finish cooking with the artichokes for another 2 minutes.
- Serve immediately.
