A classic Roman dish of veal sweetbreads (animelle) cooked with artichokes, seasoned with mint and parsley.

Method

  1. Soak the sweetbreads in cold water for two hours.
  2. Boil the sweetbreads in boiling water with two tablespoons of vinegar for 10 minutes.
  3. Remove the sweetbreads and place them in cold water to stop cooking.
  4. Clean the sweetbreads by removing the skin and any excess fat.
  5. Cut the sweetbreads into cubes.
  6. In a pan over high heat, sear the sweetbread cubes until golden brown.
  7. Add the artichokes to the pan.
  8. Season with mint, parsley, and a pinch of salt.
  9. Add a splash of water to help cooking.
  10. After 10 minutes, lightly drain the sweetbreads and finish cooking with the artichokes for another 2 minutes.
  11. Serve immediately.
