A twist on the classic Amatriciana: Cristina uses onion and Parmigiano Reggiano instead of pecorino, resulting in a 'wrong' yet incredibly delicious pasta dish.

Ingredients
8 items- Olive OilExtra virgin
- Onion
- PancettaInstead of guanciale
- TomatoCanned or fresh
- SaltTo taste
- Black PepperTo taste
- PaccheriOr your favorite pasta shape
- Parmigiano ReggianoInstead of pecorino
Method
- Add a drizzle of oil to a pan and sauté the onions until softened.
- Add the pancetta and cook for 3-4 minutes until browned.
- Add the tomato and let the sauce simmer for about 10 minutes (the time it takes to cook the pasta).
- Cook the paccheri (or your preferred pasta) in salted boiling water until al dente.
- Drain the pasta slightly al dente and add it to the pan with the sauce.
- Mix well, adding Parmigiano Reggiano cheese directly into the pan.
- Serve with an extra sprinkle of Parmigiano Reggiano on top.
