A playful twist on the classic Amatriciana pasta, improvised with leftover ingredients: pancetta, prosciutto, onion, and a touch of spicy oil, deglazed with red wine.

- In a pan, melt a knob of butter with a drizzle of olive oil. Add sliced onion and sauté.
- Add a drizzle of spicy oil.
- Cut pancetta and prosciutto into small cubes and add to the pan. Cook until rendered.
- Deglaze with a splash of red wine.
- Add peeled tomatoes (crushed by hand) and let the sauce simmer.
- Meanwhile, cook fusilloni (or any short pasta) in salted boiling water until al dente.
- Drain the pasta and add it to the sauce. Grate pecorino cheese over the pasta and toss. Serve immediately.
