Are you hungry? Then stop for a moment because today, from my Roman terrace, I'll show you a recipe that makes everyone agree when it arrives at the table: the real Amatriciana. This is pasta all'amatriciana made properly, according to the rules of art!

- Cut the guanciale into slices, not too thin.
- Heat an iron pan and cook the guanciale until it renders fat but remains tender. Remove and set aside.
- Crush the tomatoes by hand into the same pan. Add a chili pepper (optional) and a pinch of salt.
- Return the guanciale to the pan. Add the bucatini and cook until al dente, stirring to combine.
- Remove from heat and mix in a generous amount of grated Pecorino Romano until creamy.
- Serve immediately.
