A traditional Neapolitan dish of baked anchovies with cherry tomatoes, breadcrumbs, and aromatic herbs. Simple and affordable, yet incredibly flavorful.

Method
- Clean the anchovies by removing the internal organs and rinsing them well.
- Cut the cherry tomatoes in half or quarters.
- Season the anchovies with a little vinegar, chili pepper, chopped parsley, and extra virgin olive oil. Mix well.
- Season the cherry tomatoes with chopped garlic, oregano, salt, and a drizzle of extra virgin olive oil. Mix well.
- Combine the seasoned anchovies and tomatoes in a bowl and mix together.
- Grease a baking dish with olive oil and sprinkle a layer of breadcrumbs on the bottom.
- Arrange the anchovies side by side in a fan shape in the dish.
- Distribute the seasoned tomatoes evenly over the anchovies.
- Add a pinch of parsley on top and a drizzle of olive oil.
- Add a small amount of water to create moisture and prevent drying.
- Sprinkle breadcrumbs on top for a crispy crust.
- Bake in a preheated ventilated oven at 170°C (340°F) for about 10 minutes.
