Method
- Prepare a light batter by mixing a small amount of flour with water until smooth and thin – it should act as a glue for the breadcrumbs.
- Clean the anchovies: remove the head, open the fish, pull out the spine with your thumb, keep the tail attached. Check freshness: bright red gills and firm flesh.
- Cut the fior di latte (or mozzarella) into small sticks.
- Stuff each anchovy with a piece of fior di latte and a piece of mortadella. Close the fish and press gently.
- Dip the stuffed anchovy into the batter, then coat thoroughly with breadcrumbs (panco or fiocchi di pane). Press firmly to seal.
- Heat oil in a pan to medium heat (level 6 out of 10). Fry the anchovies in batches of 2–3, a few minutes per side until golden and crispy.
- Serve hot with a sprinkle of salt and fresh lemon zest (or lemon juice if desired). Optionally, fry zucchini strips the same way as a side dish.
