Recipe for pan-fried chicken wings with four types of broccoli (cauliflower, sicilian broccoli, romanesco broccoli and Brussels sprouts) and a fresh raw sauce.

- Tropea Red Onion(optional) — Not used in this recipe, but can be added if desired
Method
- Bring a pot of salted water to a boil and blanch separately cauliflower, romanesco broccoli, sicilian broccoli and Brussels sprouts, cut into pieces, for a few minutes until tender but still crisp. Drain and set aside.
- In a large pan, heat a drizzle of olive oil and add a crushed garlic clove.
- Add the chicken wings and drumsticks and sear well on all sides.
- Deglaze with white wine (Malvasia or similar), cover and cook over medium-low heat for a few minutes.
- Add the blanched broccoli to the pan with the chicken. Stir and, if needed, add a little of the broccoli cooking water to keep moist.
- Prepare the fresh sauce: finely chop sun-dried tomatoes in oil, fresh (or dried) chili, sweet pepper and parsley. Season with olive oil and mix.
- Pour the fresh sauce over the chicken and broccoli, mix well and serve hot.
