Oven-Baked Lamb with Potatoes and Artichokes

A classic Christmas dish variation: lamb shoulder with potatoes and artichokes, with a tutorial on how to clean artichokes and prevent them from turning black.

Ingredients

  • Potatoesfrom Alto Viterbese GP; use small potatoes cut into wedges with skin on
  • Carciofifresh artichokes, cleaned, trimmed and cut into wedges
  • Garlicgarlic from Sulmona; cut into halves
  • Rosemaryfresh rosemary sprigs
  • Mentucciafresh mint (preferably wild mint)
  • Spalla d'Agnellolamb shoulder, IGP Sardegna; several pieces
  • Salta generous handful
  • Black Pepperto taste
  • Olive Oilextra virgin olive oil, Terra di Filomena from Sicily
  • Lemonfor acidulated water to prevent artichoke oxidation

Method

  1. Clean the artichokes: cut off the stem, remove the outer leaves, trim the top, rub with lemon, cut into wedges, and place in acidulated water (water with lemon).
  2. Place a wet paper towel over the artichokes in the water to keep them submerged and prevent oxidation.
  3. Wash the potatoes (leave skin on) and cut them into wedges of similar size.
  4. In a large bowl, combine the potato wedges and artichoke wedges. Add salt, black pepper, fresh mint, and olive oil. Mix well to coat.
  5. Line a baking tray with wet parchment paper (to help it stick). Spread the potato-artichoke mixture evenly on the tray.
  6. Add halved garlic cloves among the vegetables.
  7. Prepare the lamb shoulder: make shallow incisions on the surface, season with salt and pepper, massage well.
  8. Place the lamb shoulder pieces on top of the vegetables. Add more garlic halves and rosemary sprigs into the incisions. Drizzle with olive oil.
  9. Bake in a preheated oven at 180°C (350°F) for about 1.5 hours, until the lamb is tender and the vegetables are cooked through.
  10. Serve hot, straight from the tray.
