A twist on classic aglio e olio with grated garlic, chili, parsley stems, and a crunchy tomato breadcrumb topping finished with lemon zest.

Ingredients

- Olive Oilextra virgin
- 100 gArtisan Pastadry pasta
- 2 tbspTomato Passata
- Breadcrumbscoarse breadcrumbs
- Lemon Zestzest of one lemon
Method
- Grate the garlic cloves.
- Slice the chili pepper.
- Cut the parsley stems into small rounds.
- Sauté the grated garlic, chili, and parsley stems in olive oil until fragrant.
- Add a splash of water to prevent burning.
- Cook the pasta in boiling salted water.
- In a separate pan, heat a drizzle of oil, add two tablespoons of tomato passata, and stir in coarse breadcrumbs. Toast until the breadcrumbs absorb the tomato and become crunchy.
- When the pasta is almost done, transfer it to the garlic oil pan.
- Add lemon zest and toss to combine.
- Finish with fresh parsley and serve with the crunchy tomato breadcrumbs on top.
