Abbacchio alla Cacciatora is a classic Roman dish of braised lamb with garlic, rosemary, white wine, and vinegar. This version includes potatoes which soak up the delicious sauce.

Ingredients

- Olive Oil
- 1 pcsAglioneA large, mild garlic clove. Use regular garlic if unavailable.
- 1 pcsFresh Chili Pepper
- Black Pepper
- Salt
- White WineAny dry white wine, e.g., Chardonnay
- Gaeta OlivesGaeta olives, small and black
- RosemaryA few sprigs
- 1 pcsPotatoesOne large red potato, cut into 1 cm cubes
- Red Wine VinegarA splash
- Vegetable Broth Or WaterHot water or vegetable broth
Method
- Heat a generous amount of olive oil in a heavy pan (preferably cast iron or ceramic) over medium-high heat.
- Add the lamb pieces and sear them on all sides until golden and crispy. Do not season yet.
- Meanwhile, chop the aglione (large garlic) with a pinch of salt to form a paste. Also finely chop the fresh chili.
- When the lamb is well seared, reduce the heat slightly and add the chopped aglione and chili. Sauté until fragrant, being careful not to burn the garlic.
- Season with salt and pepper.
- Pour in white wine until it reaches about 2-3 cm depth in the pan. Deglaze by scraping the bottom to release all the flavors. Let the alcohol evaporate completely (about 5 minutes, test by smelling).
- Add a couple of ladles of hot water or vegetable broth. Then add the Gaeta olives and a few sprigs of rosemary.
- Cover the pan, reduce heat to low-medium, and cook for 40 minutes. After 20 minutes, add potato cubes (about 1 cm) and stir gently.
- After the full 40 minutes (or more, until the lamb is tender and sauce thickened), remove the rosemary sprigs. Adjust consistency with a little extra water if needed.
- Finish with a splash of red wine vinegar. Stir and serve immediately.
