Ingredients

Method
- Peel and finely slice the white onions, blond onions, and shallots.
- In a large skillet, melt some butter over medium heat. Add the sliced onions and shallots, season with salt and pepper, and cook until they release liquid and start to brown.
- Deglaze with white wine, then add enough broth to cover. Cook until the onions are very soft and almost mushy, about 30 minutes.
- While the onions cook, toast slices of bread in a pan with a drizzle of olive oil, seasoning with salt and pepper.
- Preheat oven to 190-200°C with grill function. In an oven-safe dish (like a tagine or cocotte), layer toasted bread, then some onion soup, then more bread, then more soup. Grate Gruyère cheese generously on top.
- Bake for about 10 minutes until the cheese is melted and bubbly, and the top is nicely gratinated.
- Serve hot and enjoy.
