Pan-Fried Zucchine Alla Scapece

A healthier, pan-fried version of the classic Roman Zucchine alla Scapece. Zucchini is sautéed with garlic, chili, and mint, then deglazed with vinegar for a crispy, tangy side dish or main course.

Ingredients
7 items- Zucchinias many as desired
- 1 pcsGarlic1 clove
- Chili Pepper(optional) — to taste
- Minta handful
- Vinegarapple cider, wine, banana, or honey vinegar
- Extra Virgin Olive Oilgenerous amount
- Saltto taste
Method
- Cut off the ends of the zucchini and slice into rounds.
- Smash the garlic clove, remove the central germ, and finely chop.
- Finely chop the chili pepper (optional).
- Heat abundant extra virgin olive oil in a pan over high heat and add the garlic and chili.
- Once fragrant, add the zucchini rounds and toss to coat. Season with salt.
- Cook over high heat, stirring occasionally, until the zucchini start releasing water and it evaporates.
- Meanwhile, coarsely chop the mint leaves.
- When the zucchini are nearly cooked and sizzling, deglaze with a splash of vinegar (apple cider, wine, banana, or honey vinegar).
- Continue cooking for 2–3 minutes until the strong vinegar smell dissipates.
- Turn off the heat, add the chopped mint, and toss to combine.
- Serve immediately, garnished with extra mint if desired.
