St. Joseph's Zeppole

Chef Stefano Barbato demonstrates how to prepare traditional Zeppole di San Giuseppe, a classic Italian pastry made with choux dough using olive oil instead of butter, filled with pastry cream and topped with amarena cherries and powdered sugar.

Ingredients

- 1 tspSalt
- Sugara pinch
- 90 gExtra Virgin Olive Oil
- 90 gFlour
- 3 pcsEgg
- Lemon Zesta small piece of lemon zest
- Sour Cherriespreserved sour cherries, with syrup
- Pastry Creamclassic pastry cream, optionally flavored with rum
- Rum(optional) — a small glass, added to the pastry cream
- Powdered Sugar(optional) — for dusting
Method
- Preheat the oven to 200°C (then reduce to 180°C when baking).
- In a saucepan, combine water, salt, sugar, oil, and lemon zest. Bring to a boil.
- Remove the lemon zest, add all the flour at once, and stir vigorously until the dough forms a ball and pulls away from the sides.
- Transfer the dough to a bowl and let it cool slightly.
- Add the eggs one at a time, mixing thoroughly after each addition until the dough is smooth and glossy.
- Transfer the dough to a piping bag fitted with a star nozzle and pipe ring shapes onto a buttered baking sheet.
- Bake at 180°C for about 40 minutes until golden and dry.
- Meanwhile, prepare the pastry cream (see linked recipe). Optionally add a small glass of rum to thin the cream.
- Let the baked zeppole cool completely, then slice them horizontally with a knife.
- Fill the bottom half with pastry cream, replace the top, and add more cream in the center hole.
- Top each zeppola with an amarena cherry and a few drops of syrup.
- Dust with powdered sugar.
- Refrigerate for about 1 hour before serving.
