Mate Wine

Mate wine, also called tutuma wine, is a traditional Ecuadorian beverage made by cooking the whole mate (totuma) fruit, extracting its aromatic pulp, and fermenting it. This recipe shows how to make it with a pressure cooker in about 3 hours.

- Wash the mate fruit thoroughly to remove any impurities.
- Place the fruit in a large pot (pressure cooker recommended) and add enough water to almost cover the fruit.
- Close the lid and cook in the pressure cooker on very low heat for 3 hours from the moment it starts whistling (if using a regular pot, boil for about 12 hours).
- Allow the pot to cool completely (let it rest for 2-3 more hours until cool enough to handle).
- Open the pot, remove the fruit, and cut it open with a knife to release the now soft and liquid pulp.
- Filter the mixture (first with a coarse sieve, then with a cloth) to collect the aromatic liquid: this is the mate wine.
- Bottle the wine, seal with a cork, and let it rest for several days to begin internal fermentation and develop into mate wine.
